Let’s make a super nourishing soup that you can easily prepare on a summer day and have it cold. But if you crave a heart warmer, you can also have it heated up.
What we love about this soup is that all the ingredients are supporting healthy skin. They are full of nutrients and vitamins.
The beta-carotene in carrots can reduce inflammation, great for clearing up breakouts, and help prevent the overproduction of cells in the outer layer of the skin.
Parsley is rich in antioxidants and nutrients, also has an anti-microbial and anti-inflammatory effect on our skin.
Turmeric can contributes to glowing skin and also has anti-inflammatory properties.
Coconut milk can also provide nutritional benefits. It is packed with vitamins C, E, B1, B3, B5, and B6 as well as iron, selenium, sodium, calcium, magnesium, and phosphorus. Coconut milk contains a good concentration of lauric acid, which gets converted to monolaurin in the body, a compound with antiviral and antibacterial properties.
Garlic, black pepper, red bell pepper, and seeds can also make wonders to your skin when consumed regularly.

- 1 medium courgette
- 1 medium red bell pepper
- 1 medium carrot
- 1 medium parsnip
- handful of fresh parsley, chopped
- 2 cloves of garlic
- 1/2 teaspoon turmeric
- teaspoon sea salt
- 3 tablespoon coconut milk
- extra virgin olive oil to drizzle
- handful of mixed seeds (pumpkin and sunflower seeds)
- fresh pepper
- watercress to decorate
Add all the ingredients into a medium pan, fill it up with water until it covers all the vegetables. Cook until all ingredients are soft. Then use a hand blender and mix it until you get a smooth creamy soup. Add the coconut milk and a bit more water if needed. Bring to the boil one more time and it’s done! Let it cool down or serve it immediately if you prefer to have a warm soup.
Drizzle olive oil, add mixed seeds, decorate it with watercress, and crush a bit of black pepper.
